A Date For Santa – Stilton Cheese

Christmas time is just around the corner and what better time than to prepare something special. Whether it’s the great big Christmas meal or that ‘noche buena’ as some households call it, nothing can be more satisfying than to see a well prepared feast. Stuffed Dates of Blue Stilton Cheese And Bacon

  • 2 slices bacon
  • 1/4 cup thinly sliced onion
  • 2 cloves garlic minced
  • 1/2 cup Blue Stilton Cheese
  • 3 oz. cream cheese (sometimes they come in these small packs)
  • 2 tsp. dijon mustard
  • pepper to taste
  • 24 pcs. Medjool dates (about 16 ozs. unpitted)

Here are the Directions:

1. Preheat oven to 350 degrees. Meanwhile cook bacon until crispy, drain and then finely crumble them to pieces.

2. In a medium bowl, stir together the bacon green onion, and garlic. Add the blue cheese, cream cheese and mustard plus the pepper.

3. Stir well to combine.

4. Using a knife, make a lengthwise slit in each date. Spread each date opn slightly. Remove the pits. Fill each date with a rounded teaspoon of the bacon mixture. Place dates, filling side up, on a baking sheet. Bake 5-8 minutes or until heated through.

5. Serve warm.

These dates can be stuffed, covered and chilled up to 24 hours so there is no need to rush into stressing yourself out. Thanksgiving Sides with Blue Stilton Cheese

This is Thanksgiving week for America, which means there will be lots of necks that will be in the chopping board – turkey necks that is. Moreover, traditional food fares for this holiday include pumpkin pies, green beans, mashed potatoes, cranberry sauce, sweet potato pie, and the Blue Stilton Cheesecake. However, many households have been creative and innovated their own staples.

All over the world, Thanksgiving is celebrated because gratitude has always been a positive emotion that needs to be expressed. It is more of a celebration for a good harvest and whatever other blessings that have come your way during the year. Whatever is in abundance during the season is what’s most commonly found in the dining table.

Cauliflower Gratin with Blue StiltonThe real first Thanksgiving meal consisted of pheasants and other faunas, and it was only in the 17th century that the turkey became the proverbial symbol in the dining table along with the season’s bounties such as the pumpkin and apples.

So what are you having for your Thanksgiving meal?

Many an American household would prepare the traditional Turkey, and other sidings such as mashed potatoes, green beans, cranberry sauce and pumpkin pie. However, many an immigrant who have integrated themselves into the American tradition have created their own Thanksgiving fare giving, either retaining the turkey or substituting it for a familiar cuisine of their origin. Not only do we have our own families with us for dinner, we invite guests to share the bounties. And not only do we have the standard turkey, but have made other entrees as well. And here’s a side dish I made a couple of years ago and has been requested as a return for this year’s Thanksgiving:

Cauliflower Gratin with Blue Stilton and Gruyere

  • 1 medium head cauliflower, cut into flowerettes
  • 1 cup grated parmesan cheese
  • 3 T Stilton cheese
  • 4 T light mayonnaise (since this is very rich might as well have the light mayo)
  • 4 T sour cream
  • 1 T Dijon mustard
  • ground pepper to taste

Preheat oven to 375 degrees. Place flowerettes in steamer, making sure that the stems are the ones exposed to the boiling water. Steam for about 10 minutes until tender but still has that crunchy bite. Drain in colander and place in sink.

While the flowerettes are cooling off, whisk together mayonnaise, sour cream, lemon juice, Blue Stilton Cheese , Dijon mustard and black pepper. Stir a third of the parmesan cheese.

Spray a baking dish with olive oil or non-stick spray. Line your flowerettes into the dish and spread out evenly. With a rubber scraper cover the cauliflower with your cheese-mayo mix. Spread evenly over the flowerets. This is not a sauce but more of a topping.

Sprinkle the remaining parmesan cheese, then bake uncovered for 25-30 minutes until cauliflower is bubbling and lightly browned. Makes about 4 to 6 servings. Serve hot.

The Cocktail Trio: Stilton, Gruyere, and Bufala Mozzarella

Why else would someone want to host a party except to have fun with friends, right? And stressing before the event should never be an option. And of course, a party is never complete without morsels of cocktail food – a welcome array of tiny bites that is paired with a mixture of alcoholic beverages. Just right enough to get everyone in the mood and get the party rolling.

A cheese platter with some fruits and nuts is always the simplest way to serve appetizers, but none can compare to that of a well prepared dish that is elegant, chic as well as delicious especially if it is cheese based. So here are some simple recipes that will impress any guest. Endives with Blue Stilton Cheese and Walnut

Equipment:

  • food processor or blender
  • pastry bag fitted with large star tip (optional)

Ingredients:

  • ½ lb. Blue stilton
  • 1 tsp. Worcestershire sauce
  • ½ lb. Cream cheese
  • 60 walnut pieces
  • 7-8 endive leaves, washed

Preparation:

In a food processor or blender, combine the stilton and cream cheeses, Worcestershire sauce and process until smooth. May be prepared 2 days in advance.
On each endive leaf, pipe or spoon about half a tablespoon of the cheese mixture. Place a piece of walnut on top.

Bufala Mozzarella Bites

  • 1 pound fresh Bufala Mozzarella
  • ½ cup sun dried tomatoes (packed in olive oil then drained)
  • 1 baguette

Preheat broiler. Slice baguette into rounds, about ½ inch thick. Slice mozzarella into 24 pieces about 3/8 inch thick. Each slice should fit comfortably on a baguette round. Cut the sundried tomatoes into julienne.

Assembly:

Place a piece of mozzarella on a baguette slice, and top with a few shreds of the sun dried tomato. Run under the broiler for about 1 minute until cheese has melted. Serve.

Gruyere on Crusty Pizza

  • Organic whole wheat tortilla
  • ¾ cup gruyere cheese grated
  • 1 tbsp. Olive oil
  • ¼ tsp minced garlic
  • 1 tsp. Italian flat leaf parsley chopped
  • 1 pinch Kosher sea salt
  1. Preheat oven to 500 degrees
  2. Place tortilla on a cookie sheet lined with tin foil
  3. Sprinkle the gruyere cheese on the tortilla, leaving an inch around the edges
  4. Sprinkle on garlic and parsley
  5. Sprinkle a pinch of Kosher salt
  6. Bake in oven until cheese is melted
  7. Take pizza out of the oven and transfer to a serving plate cut in four. Serve hot.
